Jet Airways


Even though this airline's first-class service debuted in the last year, it is already in the top 10 because of its authentic Indian dishes, such as chicken breast in cashew cream sauce with a trio of lentils and a selection of local breads such as chappati and naan. Skytrax expects Jet Airways to refine its product even further in the next year and land in the top five in 2008.

Swiss

In the last year, this airline refocused attention on its first-class cuisine, which has been designed by Michelin star chef Didier Schneiter to emphasize Swiss-style cooking. Choices include lamb filet mignon with autumn vegetables in a cremolata sauce and sage gnocchi, a traditional selection of Swiss cheeses like Emmenthaler, or an apple tart tatin with bourbon vanilla ice cream. Meals are accompanied by top Swiss and foreign wines, including the local Yvorne AOC Clos de la George.

Malaysia Airlines

All first-class meals are served on Wedgewood china and can be tailored to a variety of different diets, including Kosher, Halal, high fiber, gluten free and vegetarian. Creations include lamb shank bathed in Sarawak black pepper sauce, baked North Atlantic black cod and a signature dish of Malaysian satay. Beverages include South African Rooibos tea, designer water from Ty Nant and Blue Mountain coffee.

Lufthansa

Passengers flying first-class here can expect consistently high-quality cosmopolitan offerings created by local chefs: a Chinese dim sum menu, Japanese dishes, and Indian cuisine--including chicken tikka masala, created by Hemant Mathur, a top Indian chef. Lufthansa recently announced chef David Bouley will be added to its roster, turning out such dishes as halibut with black truffle.

Qatar Airways

This airline has significantly upgraded its first-class meal service in the past 18 months. Menus are presented in leather-bound folders, and passengers can indulge in 10 courses, including traditional Arabic mezze of tabouli and hummus, a full selection of Middle Eastern breads, like lavash, and main dishes such as lobster tail or pan fried chicken stuffed with feta and tomatoes. Choices for desert include warm chocolate cake with almond sauce. The cappuccino is freshly brewed.

Korean Air

Korean is unimaginative when it comes to its Western meal choices, according to Plaisted. But it ranks in the top ten because of its excellent ethnic dishes, which include steamed oxtail, Korean bibimbop and top-grade cuts of beef.

Qantas Airways

Here eating in first-class emulates the experience of dining in a fine restaurant. Caviar service precedes each meal--an eight-course parade of food that can begin with shitake wontons, continue with a grilled lamb cutlet in olive sauce and end with a quince tart with spiced syrup and double cream. The airline serves fresh-cut fruit, instead of fruit pre-cut and refrigerated.

Singapore Airlines

First-class passengers get a choice of Dom Perignon or Krug champagne when they board and are served Servruga caviar before their main meal. A team of nine top chefs from around the globe, including Alfred Portale of Gotham Bar & Grill in New York City, have created dishes that include Korean-style eel fillet and Wagyu beef. All meals are served on Givenchy china.

Cathay Pacific

This airline is ranked second for the freshness of its food. The first class cabins have rice cookers, skillets and toasters, so eggs are made fresh and to order. Rice is served just after it's been made, as opposed to being reheated. Between meals, passengers can raid a fridge stocked with noodles, sandwiches and ice cream.

Gulf Air

Top-rated Gulf is the only airline with a chef on board for its first class cabin. Normally, airline staff are trained to reheat food, but here, a chef oversees the preparation and presentation. Edward Plaisted, chief executive of Skytrax, says the dishes served--such as honey-glazed quail on a sweet potato cake or Arabic spiced veal ragout--wouldn't be out of place in a top-notch restaurant.


Sad that Air India has been left out of this. It's meals are top class. There used to be a time when it used to get awards for its meal concepts.

And what happened to Emirates, Thai and BA?

I think they deliberately missed Air India. I've travelled AI and 9W and can assure you that AI's food is the best all around.

maybe because here the comparison is between food in first class and also the emphasis is on presentation rather than quatity where AI excels, and that is what Desis love

Air India's First Class meal presentation is shoddy, and the food isn't that good either. There is a lot of it, but you feel like you're in an Irani restaurant. You would expect the presentation of Indian food to be good (the crew are clueless on Western food, so you don't expect much on that count), but its terrible all around.

I suspect that its much better now after the 77Ls have joined the fleet.
