India, the world’s third-largest potato producer, is now going to step up production dramatically by turning to low sugar content potato cultivation to meet the booming demand for wafers and chips.
Farmers in Gujarat this year have planted the new variety on more than half of the 40,000 hectares (98,840 acres) under the crop this year. One hectare yields 23 tonnes, says a UNI report.
Potato processing firms prefer the low sugar potatoes because of higher dry matter that translates into more slices of wafers and fries.
Demand for potato chips has risen to nearly two percent of the total output from 0.1 percent two years ago, says the Ministry of Agriculture.
India, the biggest producer after China and Russia, has 1.28 million hectare under potato crop with an annual output of 22.49 million tonnes.
The cultivation of low sugar content variety is spreading to the central state of Madhya Pradesh and northern Punjab.
Canada’s McCain Foods Limited, one of the world’s leading potato processing companies, has set up a 10,000 tonnes per annum processing unit in Gujarat.
Potato plantation in India starts in the middle of November and is harvested in February and March.
India also exports raw and processed potatoes to Syria, Bangladesh, Srilanka, Dubai and Mauritius mainly to feed the chips market.

Would that make Vada pav cheaper Smile
Guess its that age when one has to avoid potatoes & concentrate on Abs Exercises .
