R, thanks you didn't take my comment in a negative light.

For the shot:
1.Use "M" setting, Point the camera (mid point) toward the outside where all the sunlight is coming in.
2.You have to set the shutter speed and aperture to expose the outside so that it wont be blown out. (since we are using flash 40D allows a max speed of only 1/250.)
3. Choose a speed of 1/250 or less(<250) depending on the light and find the aperture"F" value, so that in "M" mode the needle/pointer in the eye piece come to the centre( don't pop flash yet).
4. Now that we determined the speed and F value for correct exposure of outside, we need flash to illuminate the inside of the cockpit.
5. The FE lock may be useful in determining the amount of flash light that needs to be emitted. For this, you may pop flash and point the camera to some grey area inside(not black will cause harsher output) and press fe lock.

Then take the shot. You can do so fine tuning in the settings above to enhance to your liking.

Please let us know if you like the result and would like to add anything to the above steps.

I am not exactly sure about P&S tecnique.
For DSLR's (Canon) I'm familiar.
Metering, pick whichever you want(spot , centre-weighted or evaluative, some guys still argue which one, spot or evaluative works for me in Manual)

In manual mode there is pointer below the graduations -2 to +2(when you press shutter half way). You will have to change the shutter speed and/or F number to get it to the centre for correct exposure as per camera's light meter, left of centre would be under exposed and right would be over exposed. On 40D the thumb dial will change F (power switch should be all the way up)and finger dial will change shutter speed.




The other alternative way is use"P" mode and point at the point whose exposure you want (eg. outside light in the above shot), it will give the shutter speed and F values, use these value by going to "M" mode and take the shot (we cannot stick with P because when when compose the actual shot the camera need not point outside, we can use Av or TV mode also to find the other parameter, Sh peed in AV mode and F no. in Tv mode and then going to M with these numbers, I prefer to start and finish with "M' itself)
